Eggs, Eggs and more Eggs!


Spring is definitely here.
No eggs for months now we are averaging 20 a day!
What do you use eggs for?


I'm in need of recipes that use lots of eggs
( I was making lemon butter but I would easily eat WAY to much! )
What can I make and then freeze?

If you figure this out Kristy please let me know! :) How many chooks do you have? We are averaging 8 a day from our 7 chooks at the moment.

My daughter has severe anaphylaxis to egg. I have never eaten one of my homegrown eggs! Tragic isn't it.
I like having eggs to give away. People who don't have chooks appreciate them so much and my kids love giving them to their teachers. I also feed mine to the dogs. The neighbours get some too.
At the moment I have about 23 duck eggs waiting to be sat on.
I REALLY want ducklings.
Pavlova. you could make pavlova. Now that would be yummy!!!

Why don't you offer regular supply of eggs in supply for an hour of labour..or whatever,,,like the LETS system. Most people love fresh eggs and the ease of availability rather than the drudgery of going to the shops. Bella

Jackie French recommends making fruit cakes with your excess eggs. What about maiking lots of pancakes? They freeze well? Frittata? You can put anything in the way of vegies, cheese, fish or salmon in a frittata.

Kirsty, why don't you 'sell' them. I don't think you're suppose to but I sell the Landsborough worm man a dozen eggs a week @ $3.50, he said he'll take all I have. I also give a dozen a week to my son, we have the rest. I use them in cooking, boiled eggs, pasta cakes, etc.

From my experience, if you can get a few customers, you'll never have a problem with too many eggs.

Ditto the customer comment. When we have excess eggs I sell them to my neighbor. I also scramble extras and feed them to the dogs or back to the chickens.

Save the eggshells and crush them to feed back to the chickens, or to put in your garden when you plant tomatoes.

I would love to sell them but most of them are bantam eggs and I've found that most people dont want to pay for "little" eggs :( I'm thinking of pushing the 'Kid's size' angle and see how I go

Well, one thing is quiche. I have several recipes. Also homemde ice cream. I have a recipe for French vanilla that takes 5 eggs. I bought an attachment for my mixer that makes it. I also think you can freeze them for those times when the laying slows. Selling is a good idea. I have a slight allergy to eggs but took desesitising shots for it. My allergist suggested farm fresh, free range eggs as they have no additives. I try to buy those at the market if possible.

I second the quiche. Such a quick meal to pull out and round off with a salad. Plus, you can freeze it in serving sizes if you chose.
