Jam Thumbprints

I have had a horrible head ache all morning. I started to feel a bit better after lunch so I thought I would cheer myself up with some baking.


125gms butter

1/2 cup castor sugar

1 egg1/4 cup custard powder

1/2 cup of almond meal

1 cup plain flour

1/2 cup SR flour

2 tablespoons milk

1/3 cup jam of choice

Preheat oven 180. Beat butter until soft, add sugar and beat till light and creamy.Add egg and beat until well combined. Add custard powder almonds and flours, mix with a metal spoon. Stir till a sticky dough forms. Roll into small balls and roll in almond meal, press thumb into each and fill indent with jam. Bake for 15 mins, cool on trays Yummo!!

Spooky! [Insert theme music from The Twilight Zone] I cooked some jam drops on Wednesday too! They didn't last long though, and I've been eyeing off the biscuit tin longingly since DD#2 polished off the last one this morning. Sigh.

Mmm, those are the best biscuits. Love the good old jam drops, great for a winter treat!
